Quarantine Cooking Sessions: Arabic Bread/Sheermal Recipe
Shermaal/Arabic Bread Recipe
Ingredients:
- 1/4th cup luke warm water (for yeast rising).
- 1 egg.
- 1/4th cup Luke warm Milk (for kneading the flour).
- 2 cups of all purpose flour.
- 1 tbsp oil.
- 7 tbsp sugar.
- 1/2 tsp baking powder.
- 1 tsp yeast.
- (1 egg+2 tbsp honey for brushing on naan/sheermal.
- sesame seeds. (as required)
Method:
- Firstly in luke warm water, add 1 tsp of yeast and cover with lid and let it set for 10 minutes until the the yeast activates and bubbles start to appear.
- Next in a bowl add the all purpose flour, baking powder, sugar, oil and egg and give it a gentle mix with help of a spatula.
- Then add the yeast mixture (that has activated) into the bowl, and knead the flour with luke warm milk (as required until a soft and smooth dough is kneaded).
- After kneading the dough, make a round bowl out of it and place it in a clean glass bowl.
- Tap the top of the dough ball with a oily hand and then cover the glass bowl with clear (cling) film.
- Next place the dough in a warm place for about 2 hours until the dough rises.
- After the dough rises to about its double, take the dough out on a clean shelf and shape it like a 'roti'/'tortilla'.
- Next, place the roti shaped dough on a flat pan and cook it from its base.
- Meanwhile turn on the top burner of an oven on medium high flame because we only need to give colour to the naan/roti (as naan/roti takes very less time to cook).
- Now brush the top surface of the naan/roti with (honey+egg mixture) and sprinkle sesame seeds on it.
- After that place the naan/sheermal into the oven and let it cook for about 6-8 minutes until light golden colour starts to appear
- Remember naan/roti/shee rmal cooks in a very short time, so do keep an eye during the entire time when its in the oven.
- When done, serve warm with tea.
