Chicken Karahi
Chicken
karachi is a very authentic and traditional dish that is made all over the
subcontinent. In Pakistan, any gathering is considered incomplete without
chicken karahi in its menu. It is made with traditional spices and lots of
love. I follow my families recipe that is being made in this particular way
from ages.
Ingredients required:
- Chicken 1 kg (Cut in small pieces)
- Onions (2 large, cut in slices)
- Yogurt (4-5 tb-spoon)
- Garlic (chopped finely 1 and half tb-spoon)
- Tomatoes (4 large tomatoes)
- Oil (6-7 tablespoon up to your need)
- Coriander leaves (2 tb-spoon finely chopped)
- Green chillies (4-5 whole with centre slits)
Spices:
- Turmeric powder (1 teaspoon)
- Salt (1 and half teaspoon)
- Red chilli powder (1 and quarter half teaspoon)
- Curry powder (optional half a teaspoon)
- Coriander powder (1 and half teaspoon)
- Cumin powder (half a teaspoon)

Method:
1. First
slices the onions and add them in a pan. Add oil in the pan and fry the onions
until light golden brown.

Next
add garlic paste in it and saute for a minute until the onions and garlic turn golden
brown colour.

Then
add water inside the pan in order to prevent the onion and garlic mixture from
further cooking.

Next
add chicken, yogurt and all the spices that are mentioned in the ingredients,
and cook until the chicken changes colour.
5.
Now
add the tomatoes that are cut into halves only, into the pan.
6.
Add
one glass of water and cover with lid.
7.
After
5-7 minutes, take off the lid and remove the tomatoes skin with help of a fork
and spoon.
8.
Now
again cover the pan with a lid, let the chicken cook and the tomatoes get
softened.
9.
After
about 10 minutes of simmering, remove the lid and saute the chicken on high
flame so that the oil separates and tomatoes get evenly mixed making a fine
gravy.
10. Finally when the oil separates
you can add a little water according to the consistency of the chicken gravy
you require.
11. Garnish with red chillies and
coriander leaves.
12. Done!!!
