Chicken Steam Roast:
Well, its majority's favourite thing to have that i am sure of, Steam roast is not only very delicious but healthy too. Steam roast looks great with veggies too. I personally have my own style of making it so let's get into the recipe.
Ingredients:
- Chicken 1 whole.
- Veggies according to requirement (Potato, tomato, capsicum,green chilli onions).
Spices for chicken:
- 1.5 tsp salt.
- 1 tsp red chilli flakes.
- 1/2 tsp red chilli powder.
- 1 tsp coriander powder.
- 1 tsp cumin powder.
- 1/2 tsp paprika powder.
- 1/2 tsp turmeric powder.
- 1 tsp oregano.
- 1.5 tbsp fresh lemon juice.
- 1 tbsp soy sauce.
- 4 tbsp oil.
- 1/2 tsp baking powder(for softening the chicken).
- 1.5 tsp garlic paste.
- 2 tbsp yogurt.
Spices for Veggies:
- 3 tbsp olive oil.
- 1 tsp salt.
- 1 tsp oregano.
- 3/4 tsp red chilli flakes.
- 4-5 tbsp water.
Method:
- Wash chicken and pat dry, after that tie both legs of chicken with thread and make thin slits in the chicken so that the spices can be mixed in well.
- Next in a bowl mix all the ingredients for the spices of chicken as mentioned above, and make a paste.
- Pour the spice paste on the chicken and marinate well using hands so that all the slits that were made in the chicken are completely filled with the paste.
- Let the marinated chicken rest for about 3 hours or so.
- For the veggies:
- Cut 1 large onion, one large capsicum, 2 medium tomatoes , 4-5 green chillies and 1 potato (slice the potato very thin so that it may cook in equal time with the other veggies).
- Now put all the veggies in a bowl, add olive oil, oregano, red chilli flakes, salt and mix.
- Preheat the oven at 180 degrees for about 20 minutes prior to placing the chicken inside it.
- Now in a deep dish microwave safe pan, place the chicken and cover it with aluminium foil, let the chicken steam for 1.5 hour precisely.
- After that remove the foil, the chicken may leave water because of steam, so with a spoon pour that watery paste onto the chicken as it contains the spices then place the chicken uncovered in the oven for another 30 minutes until all the water has dried up.
- Meanwhile in a small pan add the vegetables, drizzle 4-5 tbsp of water on the veggies mixture and let it also cook for 30 minutes or until done. The veggies can be simultaneously cooked with the roast in the oven.
- Whilst the chicken is cooking keep on seeing the vegetable and take it out of the oven when done.
- After 30 minutes of cooking the chicken uncovered, now for the golden brown colour of the chicken, close the lower burner of the oven and then on the top burner of the oven only at medium flame.
- For 7 minutes cook the chicken on each side until golden brown.
- When the chicken is done, place all the veggies on the side of the chicken and serve hot.
- You may omit the veggies if you like. Enjoy.
