Shakshouka is an Arabic origin breakfast eaten widely in the Arabic countries. There are lot variations that can be made in this dish. It basically consists of a tomato sauce with eggs. Variations are made by adding sausages, chicken chunks, potatoes, mushroom and other vegetables in it. My version includes tomato sauce, eggs and potatoes in it. You may vary it according to your taste. It tastes delicious and is good for a change in your breakfast routine.

Ingredients:

  • Garlic 1 tsp finely chopped.
  • 2 large tomatoes finely chopped.
  • 2 medium sized tomatoes (cut into very thin slices so that they may cook easily and quick).
  • Cilantro finely chopped for garnishing.
  • 2 Green chillies finely chopped.
  • 2 eggs.
  • 5 tbsp oil.
  • Sausages ( optional)

Spices:

  • 1 tsp red chilli flakes.
  • ½ tsp turmeric powder.
  • 1/3rd tsp coriander powder.
  • Salt to taste.
  • Oregano ½ tsp.
  • Black pepper to taste.

Method:

  1. In a pan add in the oil, next add in the garlic and let it turn golden on medium flame.
  2. Once the garlic has turned golden add in the tomatoes and all the spices and cook on medium flame for 5 minutes.
  3. Next add in the potatoes and then add in half a cup of water and cover the pan with lid. Leave it on low flame for about 15 minutes, so that the potatoes are cooked. Remember to cut the potatoes in thin slices so that it takes less time in cooking).
  4. Remove the lid at this point if you have sausages you may add it in the sauce, otherwise omit.
  5. Cook at high flame so that the oil separates.
  6. Next once the oil has separated and the sauce is thick, with help of a cooking spoon make some space in the sauce for each egg to be broken into, for two eggs make two rounded spaces in the sauce with help of the cooking spoon.
  7. Break two eggs in a way that the yolk remains intact (like a half fry egg) in the spaces you made in the sauce.
  8. Sprinkle black pepper, some salt and oregano on the eggs and cover with lid for exact 5 minutes on very low flame.
  9. It is cooked when the eggs turn white but the yolk is still runny (not hard).
  10. Sprinkle in the cilantro and green chillies for garnish.
  11. Serve with bread or paratha.
